WHere is a simplified take on a cocktail featured on a new menu. It's a party-sized premix that is loaded full of flavours of a Christmas time, which makes it ideal for your celebration. Any leftover syrup you can use for morning drinks, desserts, or to make more rounds of the drink.
The Bikini Cocktail
Serves 10 servings
For the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
To make the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Place all the ingredients in a pan, bring to a simmer, agitating so the sugar melts. After that, turn off the heat allowing it to reach room temperature entirely. Decant to a sealable bottle, cap it and store in the refrigerator, where it will keep for around one month.
Preparing the Batch Mix: Combine the specified spirits and syrup into a sizeable container, allow it to infuse for one hour, then filter it , ideally through a fine cloth, so it's completely strained.
When ready to serve: Measure 85ml of the cocktail base to a cocktail shaker containing ice, and stir carefully for a minute to cool it down. Pour into a cold coupe glass or similar, top with the cranberries adding the final touch by giving it a light spray of mandarin oil over the drink.
